Why are my plants dying?

I think some of my 'fail safe' plants aren't faring too well. Here in London, we're three weeks without rain. We've been watering the garden every evening, but I'm wondering if it's all still too dry.
There is a Heather that's losing its pink.
A fern in shade that's curling up at the end.
A New Zealand flax (phormium) in a sunny border that is still skinny and wilting, plus a part shady hellebores that's the same.
Finally, there's a jasmine tracheleospermum that's in the sunniest spot which is droopy. I'm not sure if it's unhealthy, but I have since created a frame with hooks and wire for it to climb up. I know they are slow-growing, I just didn't think it would look so sad!

It has been dry and the plants look quite young. I think the heather might be OK, just the flowers going over.
Every day is too often to be watering plants at this time of year, they may have had too much. A good bucketful when they start to dry out, then leave them until they start ti dry out again
I don't know what that fern is but it doesn't look like one of the easy ones.
Old leaves can be cut off hellebores, the new ones look alright.
