Over the past couple of years, the leaves on my bay tree have become distinctly frilly.
Why might this be?
The plant is perfectly healthy - I think
I could be wrong, but I think that may be normal on the older, darker leaves.
Mine is the same - potted and very healthy and happy. New, pale leaves are not frilled, but then become so with time.
The plant is pretty old but it hadn't done it before. But when I think about it, I haven't pruned it so hard the last couple of years so the leaves have had more time to mature.

I just leave them on the tree and send OH out to forage when I need some!
I use a few more than you would dried as they're not so strongly flavoured
My Bay Laurel leaves did that, too over time. Not a problem.
