Pruning new Apple tree

Hi,
I've had an apple tree delivered today. It's a Malus Red Windsor in a M26 rootstock. I'm wondering whether I should prune it to get the look I'm wanting. I've attached a photo of the tree, where I've placed the red tape is where I'm considering cutting.

That probably is too short actually.

I've watched a few videos on pruning but still a little clueless.
Any ideas how I achieve this look? The main stem seems a little too high to me.
