Ours stay in the ground until we need them. They do not store except as a frozen veg.  Blanch lightly and freeze.

Mine stay in the ground too, until spring - that's if we haven't eaten them all by then. Any left then I freeze.

Dordogne and Norfolk. Clay in Dordogne, sandy in Norfolk.

One year I was so smug because I had loads in the ground.  Their price in the shops went up because of the cold weather.  Then I discovered I couldn't dig my leeks out of the ground because they were frozen in !!

Moral of the story?  Before really severe weather, dig a few leeks and store them somewhere slightly warmer.
