Plum Tree Pruning

My wife and I have a large plum tree (at least 30 foot tall) in our garden that has become a little unruly and is now growing over into our neighbours garden.
We are planning to get someone in to get it under control but want to ensure that we get it done at the right time of year so the tree is not damaged.
Any advice on what time of year is best to get this done would be much appreciated.
