Very large, old greengage tree

I have a very large, old greengage tree that is leaning over.  It looks very ugly but nevertheless, covered in fruit.  I need to cut off one of the very large branches which I think will help make the tree look a little more balanced. When would be the best time to do this?  Also, should I prune the other large branches to a more manageable size to make the tree look a little more rounded.
