every time i grow cauliflowers they get almost ready for harvesting then go purple

It sounds as if the curds are getting too much sun - fold the leaves over them, even break some leaves off and lay over the curd, to shield them from the sun.
Gardening in Central Norfolk on improved gritty moraine over chalk ... free-draining.
