As a suggestion for a rose. Here's felicite et perpetue on my pergola (at the front). It is scented but has pinkish white double flowers. Behind felicite et perpetue (and taller) is Frances Lester - slightly scented and a mass of single white flowers tinged with pink.

Knowledge is knowing that a tomato is a fruit. Wisdom is not putting it in a fruit salad.
Cut the rose stems now at the base so they can wilt a bit and be easier to remove later. Dig out the root as and when you can.
The honeysuckle can be left till autumn so the birds can enjoy the fruits. Pull out the weakened rose stems and just cut any honeysuckle you can't disentangle. It will regrow quite happily especially if given a good feed next spring.
Lots of single flowering rambling roses for scrambling up trees. You need one that is not too vigorous so not Kiftsgate, Rambling Rector or Wedding Day but plenty more to choose from. Look at the David Austin website before you go (and get carried away). Check out also Peter Beales and Harkness websites just in case.

Chrissie - have a look at Francis E Lester - it's a gorgeous scented single rambler with pretty orange hips and is deal for clambering into trees, without having ambitions for world domination.

In my experience Honeysuckle can cope with being cut back.
Why not remove the rambling rose instead and plant one that produces well perfumed flowers.

Lucky you being near there. I went on about the hottest day of the year it's about 40 miles from me.
I bought several roses but saw this "must have" for a trellis to hide my compost bins. Bare rooted only
