picking & storing tomatoes

For the first time I have grown tomatoes (Alicante).  The first two have now ripened and I have gathered them.  I have five plants and all the rest of the tomatoes are still green.  We go on holiday in two weeks and I wondered if I should pick the green ones and keep them in the fridge whilst we are away and then ripen them in the windowsill.  I don't know what else to do.  Can you advise please.
