Butternut Squash

Hi,
I have, for the first time, grown a butternut squash. I have 1 really big one and lots of little ones. The big one is getting to the 'it will be too big for the two of us stage' (in fact it is over that!). Can I crop it whilst it is still green/cream and store it in a cool dry place and give the other squash a chance or should I just leave it and hope it doesn't grow much bigger?

I have had lots of flowers open up but no squashes have formed as yet.. I do not know if its a pollination problem or the variety.. I used saved seed from one I bought.. The plants look healthy and I hope I get something happening soon..
