Cauliflower Problems

Hi Guys,
I am new to gardening and just started this summer to grow cauliflower. Well actually, I planted the cauliflower late last year and replanted them in my raised bed this summer.
They look diseased and un-editable. I took some photos and hope someone can help me identify my mistakes and perhaps point me in the right direction. I didn't want to use a chemical pesticide as I wanted organic. I read somewhere they have gone to seed, but I don't know what this means.

its flowering (that's what the white bit of a caulis is- a flower spike)
they've either been to dry or too hot or you've left them too long before harvesting, its a compost job unfortunately.
