What to do with a blackcurrant glut?

    I make jam and cordial, and freeze some. The  frozen ones can be used to liven up puddings like apple crumble, and I love a handful in a fruit salad, to give it a bit of a kick.

    I tried making blackcurrant wine, but it was too acidic, not good. A liqueur was more successful: blackcurrants steeped in vodka and sugar, to make a drink similar to Kir.

    We had a Medieval Fayre (I just hate that faux spelling!) in the town on Saturday, and there was a lass selling things like sloe gin, raspberry vodka etc.  And she had blackcurrant rum!

    Now, I've not tried this yet (as in making - not tasting) so I don't know how it will work.  But going on the same principle as Sloe Gin, and a bit of a - hic - experiment or three, I shall give it a go with some of the blackcurrants I still have (left over from last year) in the freezer.

    Worth a try?

    What about Black currant ice cream and black currant sorbet? Black currant cheesecake is also tasty.

    Can't freeze stuff this year as we'll be moving and it won't survive the journey.

    Thanks to some great ideas above I now have 2kilos of blackcurrants steeping in a litre of vodka for the next 2 months before being strained and sweetened to make a highly transportable liqueur.    

    Another 2 kilos are dripping through a muslin to make cordial.

    sounds like a highly volatile liqueur to me!!!! When we moved, we used picknic boxes filled with freezer blocks, if thats any help.  Are you taking your garden with you?

    Hi Nanny.   We're moving 800kms away which is 8 hours by car but two days in a removals van so the freezers won't get there and be plugged in before everything has thawed.

    I have been taking cuttings and divisions and collecting seed for some time.   Might need a van just for pots!

    The liqueur I made was with vodka, but I'm sure white rum would work just as well. Use similar quantities and method to sloe gin or other fruit liqueurs.
