Apple tree surgery needed soon (probably)

Morning all,
We have 2 old apple trees, an eater and a cooker. Both neglected by previous owners but in last few years they have given us plenty of fruit (although not very healthy fruit from eater). We have been cutting out blossom wilt and the odd dead branch but think it might be time to get an expert in. We love the trees and don't want to lose them. Both have moss growing on them and are unshapely. Any suggestions? Prune ourselves, and when? Recommendations of expert/surgeon in Hampshire area?
