Echinops - chop or not?

I have just read you can Chelsea chop Echinops ritro. As ours are getting quite large I would love to do so. Has anybody experience of doing so successfully.

Sorry - no. I don't chop mine
I'll have to do some more research on this as I would hate to chop them and lose the flowers.
