How to deadhead scabiosa

Hello everyone.  I have recently filled an old trough with bee-friendly flowers (and have had a couple of bumblebee visitors already, hooray!).  Amongst these flowers are scabiosa and I'm wondering how to deadhead them properly please? 

I apologise if this seems a silly question but I'm very, very new to gardening and have a lot to learn!  Thanks in advance.  :)

    I've always just literally chopped the heads off, I never bother taking the entire stem.
