Leggy pieris shrub

I have been given four shrubs but they are Very leggy but the leaves look great should I bury them deep like lavender so that the foliage is nearer the soil

Generally its not a good idea to bury stems but I find there are always exceptions to gardening rules. Personally I wouldn't bury them. Try pruning them down to encourage new stronger growth. I have always pruned my P. Japonica to grow taller but not spread out and its always done very well.
