Kale Flowering Buds - what should I do?

My kale has flowering buds. I think this may have been because I put plastic bottles over the plants to protect them - they went into the soil in January, but I could see the condensation building up in the bottles and I didn't do anything but now, after reading about kale and temperatures, I realise that an increase in temperature will make the plant bolt.
Please could someone help me with the following questions:
a) can I eat the flowering buds?
b) can I continue picking leaves after the plant has flowered?
c) will these plants continue to grow or will they die now so I will need to invest in some more?
Please advise.

They've bolted - not sure why - it could be the temperature as you say.
Yes you can eat them - great in a stir fry. The leaves will probably get coarse and touch afterwards. I'd compost them and start again.
