Tree survival near 80ft pines

We have 6 x 80ft scots pines at the end of our garden, and a massive oak tree half way down the garden.  Inbetween the two there are three ornamental trees, one is cherry although hardly blossoms, and the other two we don't know what they are, they blossom a bit but not much to write home about.  They have also been left for years so look like they are in need of a tidy up or taking out.
We've thought about taking the three of them out and planting some younger trees, that have nice blossom and possibly a fruit tree, but I'm wondering what are the chances of getting these to flourish when we are so close to these big trees in the garden.  The garden next door has a gorgeous little orchard with lovely apple trees in it, and we'd love something like that.

Would we be trying to win a losing battle ? If we were to plant new trees, can you plant them where you took out a previous tree or do you have to dig new holes for it ?

    The distance from the Oak to the Pines is about 25m and from the trees to the Pines is about 15m.

    I think fruit trees would grow at 25 m provided you are not on the north side of the Scots pines.  What is the aspect? 

    Based in Sussex, I garden to encourage as many birds to my garden as possible.
