Low maintenance veg

Hello everybody, hope you can help. I have a sunny garden with a decent amount of room to grow veg. My problem (if you can call it that!) is that I am a teacher and I tend to go on holiday for large parts of July and August (one of the perks of the job). At the moment I grow lots of lettuce, rocket, spring onions and have an abundance of early fruiting raspberries as they can all be harvested in June and July. Does anyone have suggestions for low maintainance veg that could be left unattended for 4 weeks over the summer? I have been unsuccessful with tomatoes, peppers and cucumbers. Hopefully there is someone out there that can offer a suggestion? Thanks in advance.

    I'm planning to sow swiss chard in June/July to harvest in the autumn/early winter.  Not done so before but might be worth a try?  By the way, I thought teachers had to work all through the summer holidays to prepare for the following termimage  image

    I abandoned my pumpkins and squash for 3 1/2 weeks last year and they did well and fed me most of the Autumn and early winter. I dug a 2 litre pop bottle into the ground near the roots when I planted and watered through that. Their roots like to go deep and it's a good way to make sure they don't dry out. Worked for me anyway

    You could start winter cropping brassicas off soon (Savoy and January King cabbages, kale, purple sprouting broccoli) - plant them out as soon as they're big enough - net them against Cabbage White butterflies and pigeon, and they they'll more or less look after themselves and you'll have cabbages and greens in the winter and spring.

    I'm picking lovely purple sprouting broccoli spears now from the seeds I sowed last spring image
