Parsnips hollowed out


These were the last two parsnips dug from my allotment. They have been hollowed out from below leaving an outside skin and a central conical core. I've not seen this before.
We do have a rat and mole problem on the site, but this damage looks to be too precise for rats. I've looked at images of weevil damage an that looks to be quite different.
Any ideas?

I live in west central Scotland - not where that photo is...
Voles did the same to my carrots this year, just left the shells.
