Fermenting the seeds for 3 days gets rid of the jelly-like coating which stops the seeds sticking together, so is optional. It's the way recommended by the realseeds site. Some sites say piccolo is an F1 hybrid so won't come true from seed but there are many reports of folk saving seeds from supermarket bought piccolo and finding they do come true, so definitely worth trying. Because it's a commercially grown variety I suspect it's now been bred to be stable.
Same as Bob, I've read reports from various forums and blogs that people have grown from supermarket bought Piccolo fruits and got good results.
So I agree it's worth trying if you particularly like that variety and see what you get.
Piccolo is probably a commercial variety so that's why seeds are not easily available to buy. In the case of amazon and ebay, you take your chances.
All the fermentation(jar+water+seed+lid) does is identify the good seed. The bad seed will float to the top, so you scoop these off then dry the rest for future use. I would guess that the variety of tomato you talk about is a F1 hybrid so the results will be unlikely to be as the parent, you may get some fun results though!
