I think it may have been Alan Titchmash who said to put a fork under them in the spring and lift slightly to break the roots a little, then they wouldn't flop. The Chelsea chop means they don't flop, (I haven't done it it but one of my sheep did it as an experiment for me!) but you get smaller less impressive flower heads, though more of them.

I chelsea chopped mine this June, and used the bits as cuttings in 7cm pots of gritty compost. Next years plant swap will be sedums.
The sheep ate my bits!
