cutting down part of a tree

We have two trees that are twinned at the bottom. Then each tree splits down into two again. I want to cut down one of them. Is that something that tree surgeons can give me a advice on? Or would they just want to chop most of it down? The trees are seedlings, not v nice, but I'd like to keep most of them as it's a place for birds to sit and I like birds. What I need advice on is whether it is possible and or whether it would or wouldn't look good, possibly leaving a gap.
Would anyone know what the best time of year is for this work? and what if it's not the right time, is that a problem?

Winter is the time to do it, Bandita, when the trees are dormant.

Bandita , a good tree surgeon will listen to your concerns and advise accordingly.
A cowboy will just want to cut it down.
