My latest apple tree that I bought last year has a mass of blossom on it and I am afraid that if too many turn into apples the young branches will snap, should I take some of the young apples off ? They are Bramleys so they have the potential to be large apples.

Some will fall of in june the june drop i would just leave yoursellf one apple per cluster it being a young tree
I agree with bugsy, wait for the june drop which might be in July this year
then thin later if you need to. Check out Stephen Hayes' videos on youtube for some great ideas and encouragement.
