Revitalising Borders

Hi,
My new garden has quite a few borders and none of which are straight, which is quite nice, but they have been untouched for at least a year and maybe longer. So the lawn kind of blends into one with no distinct edge. There is maybe 9" of long grass running into the borders below the shrubs (which are all overgrown).
My question is, to start tackling these edges should I strim? Should I go around by hand pulling out the long grass, or should I maybe get one of those 'D' shaped spade edging things which I know exist to cut a nice clear and sharp edge?
I have added a photo below to give you a kind of idea but it's not directly a picture of the borders

Yes I use a half moon edgeing tool as well.
Wow I wish my japanese anenomes were that big, mine are in shade and don't grow very tall.
