Neglected Cox Pippin tree

After several years, I have taken the time to find out about my poor neglected apple tree. To my surprise, it has been identified by the Apple Growers Association as a Cox Pippin- my favourite apple- see the photo! There are apples on it- not very ripe- most not getting enough light- Cox are picked in around October -the tree pruned later in Winter. What do I do now about the apples? See if they will ripen a bit more, leave them as windfall for animals or pick some now? I have picked a few- barely edible. I love apples- it will be disappointing to leave them - I don't have any idea how I will get it pruned over the winter. Any advice from those with apple trees in the garden would be appreciated.
