Sweetcorn ripe?

I'm growing a lot of things(!) for the 1st time this year including sweetcorn: I have half dozen plants of the 'swift' variety all at different maturity.
I have 4 cobs where the tassels have turned brown (which most info sites tell me the cobs are ready), but I'm finding that the grains are so small that it is very hard to tell if, when squeezed, the grain liquid is clear or milky.
I also noted that when I unwrapped a cob for testing, the tassels 'inside' the cob leaves is still green - does this need to go brown as well?
Any advice, as ever, gratefully received.

I have just harvested most of my 'Swift' sweet corn [some not ready yet - tassels only half brown !!!] After the tassels turned completely brown I left them for another week. The top few rows of corn were still white but the rest were golden and lovely. The inside tassels were white, which is normal.
I grow 'Swift' every year but this year they were strange. Only three quarters as high as normal and strange fruiting. Usually they have two nice plump cobs, but this year they had one, two, three or four cobs of various sizes. Beats me!!
I have just harvested two cobs - grains are a bit pale, but seem to be ripe and taste ok!

I do have one (well, alright, two) other question if I may: is it correct to boil the cobs immediately after picking to keep their flavour? And if so, for how long.
Further: if the cob does turn out to be a little under ripe when picked, can they be stored to ripen them?

have grown swift on allotment for first time this year to try it not impressed all stalks have 2 cobs but cobs are very small
