Hebes would make a nice edging plant. There's a few which don't get too big and stay in a smallish mound so not too much clipping and trimming if you're short of time. If you want something more floral and less formal, I'd agree with thyme. It makes an excellent edging plant and won't encroach too much on the path for ease of access to your veg beds.

How about alchemilla mollis (ladys mantle). I know not evergreen, but so pretty after rain.
I use campanula a small flowered type I'm not good at varieties, I have lots and its easy to root yourself and plant in other areas

Yes thyme is good and there are so many varieties to choose from maybe alternate different types for more interest
