Rocket: pot size and when to harvest

I have 3 rocket plants as shown.
Is this a good size leaf to harvest or should I leave the plant to get much bigger?
Are the pot sizes OK? (the single pot is about 24cm diameter and the double pot is about 50cm wide)
Also, the 'spur' from which all the leaves grow is not in the soil as I would expect, it is about 4 inches away from where the stem comes out of the soil. Should I bury the stem in the soil?

They look ok to me as they are, Mameha. Keep picking the outer bigger leaves, more will follow from the middle. They may flower, mine are starting to, but I just snip the flowers off.
