Sheeps sorrel vs common sorrel

I'm looking to plant some sorrel (either sheeps or common) I can't really decide what to go for, is there a difference really? I know sheeps sorrel is a little small but in terms of conservation value is there much of a difference?

I'd get Rumex acetosa, you can eat that. Common sorrel?

sheep sorrel prefers more nutrient poor or acid soils where common sorrel can take a richer soil.
