no blossom just leaves

i have dwarf fruit trees, two apples (james grieve & braeburn) and a dwarf plum (prunus domesticor?) I have a few questions regarding these:
info: I planted the two (bare root) apples last year against a sunny wall with the intentions of expeliering them I bought these from asda but the side branches are very very thin so i may try and grow them as cordons due to wall space available, the two apples are planted 18inches apart,
1) these have leaves but no blossom, why?
the plum tree i bought back from france (in a pot) two yrs ago and it spent the first year i had it in a pot then i planted it in the ground a foot away the compost bin (which is also sitting on the soil)
2) it also has leaves and no blossom, why?
in the garden i also have a bramley and a dwarf eating cherry which both have blossom.
I did do my research to make sure that the three apples are compatible for fertilising each other.
3) when will be the right time to trim off side branches of both apples to make it into a cordon ?

Bumping this up the list.
They are still young and getting themselves established, it may take a couple of years yet before they are ready to fruit. Apple blossom just coming out now for me on Surrey/Sussex border, plum trees almost finished now.

the plum pansyface is just said prunus domesticus (or similar) i have the wires up and trees are planted at the right angle so will prune off skinny branches come november.
thanks steephill i am in east sussex and other young trees in blossom so will just have to be patient (not my best virtue where gardening is concerned)
