How Much Sun
Ok so I'm a little bit torn on a few Herb issues I am having.
Here are my current Herb statuses.
Thyme - Losing colour and bushyness.
Oregano - Looks to be on ther verge of death, few leaves very discoloured.
Now I'm told they like sun and not to be overwatered. However that does not seem to be working Its probably in the sunniest spot so I'm wondering if in fact there is too much sun here? And maybe given the high amount of sun I should water more. Its a little difficult as the top soil is dry and its difficult to tell always if more water is needed.
Any advice?

TC nearly all herbs like full sun and little water, it may be the drainage that's causing the issue. Topsoil is not the best environment for herbs, they mostly do best in containers. If you don't go down the container route, dig the herbs up and incorporate plenty of grit into the new planting hole. Horticultural grit from the GC is the stuff to get and be generous with when replanting. It should be a 50/50 mix of grit and soil, mind you Rosemary likes even sharper drainage and will thrive in sand.
I water my pot grown thyme when the surface soil looks parched and I cut it back to maintain the shape of the plant.
Yes they are in pots and get an awful lot of sun. Sunniest area. Maybe I have not watered them enough. When I saw they don't like lots of water I held of quite a bit, my Lemon Balm sagged awfully this week so I watered it and within a few hours it was fully beaming with life again. Unfortunately Thyme and oregano don't show the same results but may take more time so.......
Have you got good drainage? In winter that is essential for mediterranean herbs. You seem to have the best aspect for the herbs. The Lemon balm needs damper conditions, it self seeds freely on my clay soil in NW England, so keep it damper than the others
