horseradish

Hi veg guys I purchased a root last year and planted in the corner of my rhubarb bed so to have least chance of disturbance. It obviously wintered over and has green foliage about 4" tall do I leave it alone for the summer and how do I get a bit of root for cooking? I presume I don't dig up the whole thing other wise it's going to be an expensive pot of  sauce
