First Year Rhubarb

Good Morning!
I planted some Rhubarb last year that my Grandad's friend had grown from seed.
It has put on some good healthy growth in the past few weeks.
I have read that you shouldn't harvest first year Rhubarb from a young plant, so should I just leave it?

Yes, don't pick any this year. Pick just a little next year. The following year you'll be repaid with a really sturdy crown and an increasingly substantial harvest.
I'd give it a mulch with some well rotted farmyard manure or similar right now.

Of course you shouldn't cut any the first year... but I don't think a stalk or two is going to make much odds if it's really growing strong. I'd stew it down with some strawberries for putting over ice cream.. It will give you something to taste, but won't set the plant back any.
