I cut off the flower spike at the bottom after flowering before I knew I shouldn,t. It has never flowered since. Have I ruined it or is there something I can do?

No, you haven't ruined it.. but you do need to provide the right conditions for flowering. They are pretty tough plants, and just a few changes can bring them back into flower. Is the plant currently growing a new leaf or root? I find mine sort of cycle.. new root, new leaf, and then finally a new flower spike. Not always necessarily in that order. There is lots of information online about growing conditions and how/when to water. Ensure you've got them on a bright windowsill. Mine are happy on my East facing window above my kitchen sink (which is usually full of soaking dirty dishes, which provides a nice moist micro climate). They get direct sun for a few hours in the morning, and seem very happy there.. out of four plants two or three are always in bloom. Seeing them there also reminds me to check and see if they are ready for a water or not. In another house I had them in a large bay window with no direct sunlight, over trays of pebbles and water.
Just move them around your house every six weeks and see where produces flower spikes. I water mine with fishtank water every time I change my tank water, but you could try giving them a diluted feed if you have had them for a while.
I could never get them to reflower until I got some orchid food, the one in the pink bottle. I also water them with cold tea and spray the aerial roots occasionally.
