I thought my standard bay tree had died in the cold winter weather a few years back. The leaves all went brown and it didn't grow a single new one all the following year. I abandoned it in a forgotten corner and bought myself a new pot of bay from the garden centre, which I split up to create 18 new baby bay trees. Last spring the old bay tree sprang back into life and produced lots of new leaves - so I now have 19 bay trees!
Incidentally, I don't protect them at all in the winter (I'm in Essex). Most are in pots but I also have a couple thriving in the ground.
