Winter Savory

So I have a Winter Savory in the garden, its not massively big, but I am really liking the flavor adding to salads.

The problem is I think I am harvesting it a bit to heavy.

So the question is, should i just harvest the leaves, or should I get the stems. If so where should I cut them?

How do I strike the best balance of letting it grow aor cutting it back?

    I have winter savory and yes it does taste nice, a sort of savoury taste oddly enough. I cut off the soft stem tips and leaves, and at the end of last year I heavily clipped it back, leaving plenty of leafy growth. I am not harvesting mine yet, I'm letting new growth come through. Does your plant look healthy? Did you allow it to establish? Mine is about 30cm across, with plent of thick branches at the centre. If your is weedy, maybe you should let it be for a few months. Or buy two or three more, and spread the load!

    Maybe I was too quick to start harvesting. Its my first year of having one so I probably did not let it establish enough. I was just so eager to try it.
