Keep it very wet
I planted some supermarket watercress in my pond years ago, it still appears in greater or lesser amount depending on the season.

I believe it needs to be grown in flowing water, it's often used in Koi pond filters.
It's grown in flowing water commercially but that might be to avoid it smelling of stagnant water. It does fine in my pond with no flow.

I bought some supermarket watercress too about last September. It grew like crazy and is coming back strongly this spring, no water flow either
Mine has come back this spring

Grew mine from seed two years ago.
Two pots sit in large saucers kept filled with water.
Found that a good fertiliser twice a year, I use an organic pelleted one, really makes the growth shoot away with lots of lovely leaves to enjoy.
Can pick daily as growth is so rapid.
I have it growing wild in a spring at the bottom of the garden but sadly rats are present and water and rats do not go together, and I would never touch the stuff just in case .
No wish be a party pooper and I don't think it's relevant in this instance. However, I would advise anyone who forages or buys watercress from an unknown source to familiarise themselves with the dangers of contracting liver fluke from it.
David is correct.
Years ago living just outside Chepstow, near Beachley Point, locals gathered some growing wild and all enthused about it being free, but some time later all had to be treated for liver fluke
