Plum tree

Have been given a plum tree by friends who unfortunately bought a full size one. We have a small garden and they didn't realise it wasn't a dwarf variety tree.
Current size about 5 feet, young tree, obviously. Now to keep it at around six feet tall my intensions are to keep centre leading/growing branch/trunk at six feet high by clipping it then as side branches get longer espalier them along horizontal wires.
What say the expert gardeners? I seem to be a Medusa I look at a plant and it dies off so now go out with sunglasses on.
