Can you please id the two seedlings in the top photo , and should I snip the top of the Penstemon cutting in the second photo , Thanks Wendy.

1st one looks like penstemon, second , bit early to tell for sure. Leave them a week and repost?
In the seedling pot, most look like Brassica (from the cabbage family, google on).
The one with parted leaves should be a Convolvulacea (from the ipomoea family).
