Budding fruit trees

Having just purchased an apple tree for a friend as a wedding gift for Monday, it has just dawned on me that this gives me the opportunity to have a go at budding and add another variety of apple to the tree in the garden.
As this will be a new experiment for me, can anyone give me an idea when is best to have a go (as googling just says 'summer') and do I need to use proper graft tape?
