You can put potatoes in your compost bin - but I don't because they're likely to attract rats - rats love potatoes above almost all things - my brother (potato farmer) says rats will do anything (even eat through a concrete wall) to get to potatoes, and he swears they can smell a potato a mile off.
I don't put potatoes in my compost bin. I do put potato peelings in the compost bin, but make sure they're well spread about.
