Stored Spuds Sprouting

I placed my pulled spuds in sacks back in August and in the last two weeks they have started to sprout
They are under the stairs in the sacks in the dark
? Any suggestions as to why and what to do if anything
Everyone is just trying to be Happy.....So lets help Them.

What variety are they? Are they maincrop?
They're probably too warm. They need dark, dry and cool conditions.

I only grow new potatoes and eat them as we harvest them. Brother is a big potato farmer and grows thousands of tonnes - they're all stored in huge chilled stores. If I'm lucky I get a sack of potatoes (and some carrots, parsnips, onions and sprouts) from him at Christmas and I keep them in the garage - cool, dark and frost-free.

I suppose I can try the shed in the garden but wont that attract Ratty
Rats do love potatoes. How big is your shed? Is there room for an old (not working) chest freezer - you could put the sacks of potatoes in there - with the lid down that should be rat proof.

As usual Dove has hit on the problem. For us small time growers it is best to grow just as many earlies or 2nds as we can eat by early October. They are very hard to keep any longer without cold storage. Here in Tipperary we have only had 2 nights of light frost so far and in such conditions only maincrop will hold.

I only have in total one sack full from planting about 150 tubers !!
I tried 6 varieties of spuds and I was dissappointed with the returns so I will just try new potatoes and sweet potatoes next season as it seems too much trouble to do a big store of spuds
