I have a young smoke bush young lady... when do i cut the flowers off or do i just leave it alone

I'd leave it until Spring , then give it a prune to encourage bushy new growth, otherwise they can become a bit " leggy"
Leave it alone, I don't do anything to mine. You can prune to a shape before it starts sprouting next year.
