Runner Bean Beans

I have a lot of runner beans that have now gone over - some pods are brown and dry and some are just huge and tough.  I have read various views on how to store and eat the beans.  Some say dry and then slack and boil for 10 mins to get rid of the toxin  and some say you can freeze them without drying them and then can use straight into casseroles etc.

I am in a quandary as I don't want to waste these beans (I will save a few for next years planting) but I don't fancy poisoning my family either!!

Any thoughts?

    I tried that, I thought the beans tasted absolutely discusting, different peoples taste I suppose.this year I made sure I picked them while they were tender and fresh. Lots in the freezer now.

  • Thanks Lyn.  I will try the drying method and be sure to boil well I think.
