Sour Apple Tree

One of my new Allotmenteers has inherited an apple tree but the apples are very sour

1.Can you change the bitterness / taste of an existing fruit tree

2.If not what is a good variety of a small tree to start off from new

    Are they small like a crab apple tree? Or some varieties of apples need to be stored for a couple of months before eating

    I forgot about those, they are normally a lot bigger than eating apples
