Rhubarb

Can anyone tell me if you can freeze rhubarb?

    If you're going to use it fairly quickly just cut it up and bag it.  If I'm going to keep it a bit longer I either freeze it as a compote or roast it in the oven with a little sugar then bag it.

    But I don't pick rhubarb after July.  I leave it on the plant so that the leaves die down and the nutrition passes back down to the crown to provide next year's crop.

    Yes i agree with Dovefromabove. Something nice to eat during winter when fruit and veg are expensive
