Freezing corn on the cob.

    That's what I do, but with butter, like your OH.

    Many , many thanks for the replies one and all. I'll put it to O.H. and see what he thinks. He'll be cooking them after all. I'm conscious of the whole " soon as possible" aspect , ( and it's got to be easier ) so I think I might suggest we go with no blanching. 

    Forester, when you say " cleaned" do you mean, just get the worst of the dirt off or strip all the outside foliage off? 

    Forgive me if I sound a bit thick. In years gone by , we've only had enough to pick and eat, storing has never been an option.

    Hi Hostafan - Yes, I take off all the outside foliage and the hairy/stringy/tasselly bits that are in between the individual corns - well as much as possible anyway.  If I get all the plastic bags ready before I go down to the allotment to pick the cobs they are in the freezer before you can say Jack Robinson and that helps them to keep their sweetness.

    Morning all,I lost about 30 cobs last year doing the strip,food bag and freezer bit , are the freezer bags the ordinary ones you just pull off or special zippy type of thing please,

    What do you mean "lost them" Alan? I use both those sorts of bags, so long as the air is kept out they should be OK.

    Hi,when i got them out and de-frosted them ,they were not plump anymore and looked how can i say ,sad and had no Body  and i cooked a few but were sloppy type of thing,

    I think you have to cook them from frozen. Don't defrost them first.



    Also remember the only product that is improved by freezing is ice cream. Nothing else improves.

    For stripping, just the niblets, I half cook the cobs, then strip them, freeze in bags, then cook them a very short time in a little water or butter. They've been OK, definitely not sloppy. I usually freeze them whole though, but it takes up space.
