Well I'll be pickled!

Good afternoon peeps, 

Does anyone know how long pickled beetroot will last in jars? I've just done my first batch and added to the boiled beetroot I used tonnes of vinegar, sugar, orange juice and water.  Also, will it be ok in the cupboard or does it need to go in the fridge? Any tips gratefully received! Thanks muchly.

    Hi Tootles,

    I have been pickling beetroot for *******years.  I put mine in kilner jars in spiced pickling vinegar and stored in the garage on shelves.  I am now eating beetroot pickled a year ago and it is perfectly OK.  I don't think it would keep a lot longer than that but I only pickle a years worth at a time.  Hope this helps.

    Thanks Forester2. Is pickling vinegar different to the everyday normal stuff? I used cider vinegar with a few splodges of left over balsamic.  Hope that'll be ok.

    Hi Tootles - I was thinking after I posted the last message that as you have mixed water and orange juice in the vinegar it may not last as long as mine as vinegar is the preservative.  Anyway, you can just experiment and see how it goes.  You will know if it has gone off as the beetroot will go a funny pale colour.

    I'm still eating pickled beetroot from last year.I use either pickling vinegar or distilled vinegar and only pickle it a year at a time. Providing the beetroot is totally covered and your jars are sterilised it should be ok for at least a year.

    I keep mine in a cool cupboard in the kitchen image but if you have an outdoor storage place, like a garage it would be a better option.

    I have rhubarb chutney I made 2 years ago, just stored in the garage and still fine to eat.    Don't like pickled beetroot but love it roasted, souped, or just boiled and sliced and added to a red cabbage salad with red peppers, red apples, red onion, red radishes and a sweet and sour vinaigrette or grated raw with carrots for a beetroot slaw and it makes the most delicious, moist chocolate cake or brownies.

    Tootles I misunderstood the thread title I thought you were on the sherbert image

    I don't pickle beetroot but love it cold with Greek tzatziki on it. Good way to use up your cucumbers and garlic. Also nice slightly warm with garlic crushed on it and drizzled with olive oil image

    Eeeeh by gum, that sounds very tasty!  I found a recipe for a beetroot and chocolate cake.... I'll report back at the weekend. 

    Talking of the sherbert, I wonder if there is such a thing as beetroot wine??
