What's the best way to gather the seeds from my perpetual spinach plants . ?

Why would you want to do that?
If you are determined, let the seeds mature and the foliage die down then separate the seeds out and make sure they are fully dry (or they will go mouldy) before you store them.
They are really tall and taking up quite a largd area in a relatively small veg plot . Starting again from seed seemed like a good idea, thanks for the feedback though
Cut them back and they'll start again won't they?
